Ingredients
- 300 g plain flour
- 20 g cocoa powder
- 1 teaspoon bicarbonate of soda
- 1/2 teaspoon fine salt
- 250 ml buttermilk
- 1 tablespoon red gel food coloring
- 150 g unsalted butter, softened
- 275 g caster sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 400 g full-fat cream cheese, cold
- 150 g unsalted butter for frosting, softened
- 175 g icing sugar
Method
Heat the oven to 180 C, or 160 C fan. Grease and line three 20 cm cake pans.
Whisk the flour, cocoa, bicarbonate of soda, and salt. Stir the buttermilk and coloring together separately.
Beat the butter and caster sugar until pale, add the eggs one at a time and the vanilla, then fold in the dry ingredients alternately with the buttermilk mixture.
Divide among the pans and bake for 24 to 28 minutes. Cool completely and trim a thin layer from one cake to make crumbs.
Beat the frosting butter and icing sugar until smooth, then briefly beat in the cold cream cheese. Layer and coat the cakes, and press the reserved red crumbs around the top edge.
