A home-scaled version of the German torte with thin sponge layers and chocolate buttercream.

Six-Layer Prinzregententorte

Ingredients
- 6 large eggs
- 180 g caster sugar
- 180 g plain flour
- 60 g melted butter
- 250 g unsalted butter, softened
- 200 g icing sugar
- 150 g dark chocolate, melted
- 150 ml double cream
- 150 g dark chocolate for glaze
Method
Whisk eggs and caster sugar until thick, fold in flour and melted butter, and divide into six equal portions.
Spread each portion into a thin 20 cm round and bake at 200 C, or 180 C fan, for about 6 minutes. Cool.
Beat softened butter and icing sugar, then add melted chocolate. Stack the six sponges with thin buttercream layers and chill.
Heat cream, pour over glaze chocolate, stir smooth, and coat the chilled cake.
