- 12 cupcakes
Ingredients
- 150 g plain flour
- 45 g unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon bicarbonate of soda
- 1/4 teaspoon fine salt
- 150 g caster sugar
- 2 large eggs
- 120 ml neutral oil
- 120 ml buttermilk
- 1 teaspoon vanilla extract
- 120 g lime curd
- 1 to 2 drops green gel food coloring
- 100 g unsalted butter, softened
- 200 g icing sugar
- 1 tablespoon whole milk
- 12 small gummy worms
Method
Heat the oven to 180 C, or 160 C fan, and line a 12-hole muffin pan with paper cases.
Whisk the flour, cocoa, baking powder, bicarbonate of soda, salt, and caster sugar in a large bowl.
In a second bowl, whisk the eggs, oil, buttermilk, and vanilla. Pour the wet mixture into the dry ingredients and stir just until smooth.
Divide the batter among the cases and bake for 18 to 20 minutes, until the tops spring back. Cool completely on a rack.
Stir enough green coloring into the lime curd to make it vivid. Cut a 2 cm-wide core from each cupcake, stopping before the base, and spoon in the curd. Trim the removed cake plugs and replace them over the filling.
Beat the butter until creamy, then gradually beat in the icing sugar and milk until fluffy. Pipe or spoon a ring of frosting around each filled center and add a gummy worm so it appears to emerge from the cake.
