About Junior Bake Off

The kids' corner of the Bake Off franchise runs the tent's challenges by gentler rules: feedback is specific but kind, no critique is played for drama, and the judges are visibly rooting for every baker. The adult lineup has changed more than any other corner of the franchise, from Mary Berry and Paul Hollywood on CBBC to Harry Hill's gleefully absurd Channel 4 era. The result is the warmest show in the entire tent family.

The format

Young bakers take on scaled Bake Off style challenges each episode, with the field narrowing until a series champion is crowned. There is no cash prize; the title is the whole point.

Method

  1. Whisk the plain flour, cornflour, and salt together in a bowl.
  2. Beat the butter and caster sugar for 2 to 3 minutes until smooth and slightly lighter. Mix in the vanilla, then stir in the dry ingredients just until a soft dough forms.
  3. Divide the dough in half, flatten each half into a disc, wrap, and chill for 30 minutes. Heat the oven to 180 C, or 160 C fan, and line two baking sheets.
  4. Roll one disc at a time on a lightly floured surface to about 4 mm thick. Cut 24 rounds with a 5 cm cutter and transfer them to the sheets. Cut a small window from the center of 12 rounds.
  5. Chill the cut biscuits for 10 minutes, then bake for 12 to 14 minutes until the edges are pale gold. Cool on the sheets for 5 minutes before moving to a rack.
  6. Dust the windowed biscuits with icing sugar. Spread about 1 teaspoon of jam on each solid biscuit and top with a windowed biscuit. Leave for 20 minutes so the jam settles before serving.

Ingredients

  • 450 g strong white bread flour
  • 7 g instant yeast
  • 1 teaspoon caster sugar
  • 1 teaspoon fine salt
  • 280 ml lukewarm water
  • 2 tablespoons olive oil
  • 100 g tomato paste
  • 1 teaspoon dried oregano
  • 150 g low-moisture mozzarella, grated
  • 80 g mature cheddar, grated
  • 1 large egg, beaten

Method

  1. Mix the flour, yeast, sugar, and salt in a large bowl. Add the warm water and olive oil and mix to a soft dough.
  2. Knead for 8 to 10 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and leave to rise for 60 to 90 minutes, until doubled.
  3. Mix the tomato paste with the oregano. Combine the mozzarella and cheddar in a separate bowl.
  4. Divide the dough into three equal pieces. Roll each piece into a 30 cm circle, trimming around a plate if needed.
  5. Place one circle on a lined baking sheet. Spread with half the tomato mixture, leaving a 1 cm border, and scatter over half the cheese. Top with a second dough circle and repeat the filling. Cover with the final circle and seal the outer edge.
  6. Set a 6 cm glass lightly in the center as a guide. Cut from the glass to the outer edge to make sixteen equal strips, then remove the glass.
  7. Take two neighboring strips, twist them away from each other twice, and pinch their ends together. Repeat to form eight points. Cover and prove for 25 to 35 minutes.
  8. Heat the oven to 200 C, or 180 C fan. Brush the exposed dough with beaten egg and bake for 25 to 27 minutes until deep golden and cooked through.
  9. Cool on the tray for 10 minutes before transferring the bread to a board and pulling apart the points to serve.

  • 180 g plain flour
  • 50 g caster sugar
  • 1/4 teaspoon fine salt
  • 125 g unsalted butter, cold and cubed
  • 90 g smooth peanut butter
  • 75 g light brown sugar
  • 2 tablespoons golden syrup
  • 397 g sweetened condensed milk
  • 1/2 teaspoon vanilla extract
  • 150 g dark chocolate, chopped
  • 25 g roasted salted peanuts, roughly chopped

Method

  1. Heat the oven to 180 C, or 160 C fan. Line a 20 cm square tin with baking paper, leaving enough paper to lift out the finished slab.
  2. Mix the flour, caster sugar, and salt. Rub in 100 g of the butter until the mixture forms damp crumbs, press it firmly into the tin, and prick all over with a fork.
  3. Bake for 25 to 28 minutes until pale gold. Cool in the tin for 15 minutes.
  4. Put the remaining 25 g butter, peanut butter, brown sugar, golden syrup, and condensed milk in a heavy saucepan. Stir over medium-low heat for 8 to 10 minutes until thickened and slightly darker, then remove from the heat and stir in the vanilla.
  5. Spread the caramel over the shortbread and chill for 45 minutes. Melt the chocolate gently, spread it over the caramel, scatter with peanuts, and chill just until firm before cutting into sixteen bars.

  • 1 tablespoon caster sugar

  • 400 g peeled and cored cooking apples, cut into 1 cm dice
  • 45 g light brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 2 teaspoons cornflour
  • 1 egg, beaten
  • 2 teaspoons demerara sugar

Method

  1. Mix the flour, caster sugar, and salt. Rub in the butter until flat flakes and pea-sized pieces remain, then stir in enough cold water for the dough to hold together. Flatten into a disc and chill for 30 minutes.
  2. Cook the apples, brown sugar, cinnamon, and lemon juice in a wide pan over medium heat for 6 to 8 minutes, until the apples begin to soften and excess liquid has evaporated. Stir in the cornflour and cool completely.
  3. Heat the oven to 200 C, or 180 C fan. Roll the dough to about 3 mm thick and cut sixteen 11 cm rounds, rerolling scraps once if needed.
  4. Divide the filling among eight rounds, leaving a clear border. Brush the borders with beaten egg, cover with the remaining rounds, press out trapped air, and crimp the edges with a fork. Cut a small steam vent in each pie.
  5. Transfer to a lined tray, brush with egg, and sprinkle with demerara sugar. Chill for 10 minutes, then bake for 22 to 25 minutes until deeply golden. Cool for at least 10 minutes before serving.

Method

  1. Mix the flour, caster sugar, yeast, and salt in a large bowl. Add the warm milk, egg, and 30 g of the butter, then mix to a soft dough.
  2. Knead for 8 to 10 minutes until smooth and elastic. Place in a lightly greased bowl, cover, and leave to rise until doubled, about 60 to 90 minutes depending on room temperature.
  3. Mix the remaining 25 g butter with the brown sugar and cinnamon. Set aside one quarter of the dough, then roll the rest into a 28 x 32 cm rectangle. Spread with the cinnamon mixture and cut into eight long strips.
  4. Roll each strip into a loose coil and place on two lined trays. Divide the reserved dough into eight heads and sixteen small feelers, attaching them to the coils with a little water. Add currants for eyes. Cover and prove for 30 to 40 minutes.
  5. Heat the oven to 190 C, or 170 C fan. Bake for 18 to 22 minutes until golden and cooked through. Cool for 15 minutes, then stir the icing sugar, milk, and vanilla into a thin glaze and drizzle it over the shells.

The eleventh series splits 16 bakers across two five-day heats, each moving through Cake, Biscuit, Bread, Dessert, and Pastry days. Eight bakers then enter four themed Finals Week rounds before a Summer Day Out final. Home-Kitchen Chocolate Lamingtons

Small vanilla sponge squares dipped in a light chocolate coating and rolled in desiccated coconut.

Ingredients

  • 125 g unsalted butter, softened, plus extra for the tin
  • 150 g caster sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 200 g plain flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine salt
  • 120 ml whole milk
  • 250 g icing sugar, sifted
  • 30 g cocoa powder, sifted
  • 25 g unsalted butter, melted
  • 120 ml boiling water
  • 180 g desiccated coconut

Method

  1. Heat the oven to 180 C, or 160 C fan. Butter and line a 20 cm square cake tin, leaving enough baking paper overhang to lift out the sponge.
  2. Beat 125 g butter and the caster sugar until pale and fluffy. Beat in the eggs one at a time, then beat in the vanilla.
  3. Whisk the flour, baking powder, and salt in a separate bowl. Fold half into the butter mixture, fold in the milk, then fold in the remaining dry ingredients just until smooth.
  4. Spread the batter evenly in the tin and bake for 23 to 25 minutes, until golden and a skewer inserted in the center comes out clean. Cool for 10 minutes in the tin, then lift onto a rack to cool completely.
  5. Wrap the cooled sponge and chill it for 30 minutes. Trim the edges if needed, then cut the sponge into 16 equal squares; chilling reduces crumbs during dipping.
  6. Whisk the icing sugar and cocoa together. Add the melted butter and boiling water, whisking to a smooth, fluid coating. Put the coconut in a separate shallow bowl.
  7. Using two forks, dip one sponge square at a time into the chocolate coating, let the excess drain, then roll all sides in coconut. Place on a rack and leave for at least 30 minutes to set.

These are conventional square lamingtons and do not attempt to reproduce the programme's undisclosed Lambington design.

If the coating thickens while dipping, whisk in hot water one teaspoon at a time until it flows easily again.
