About Spring Baking Championship

The pastel-toned corner of Food Network's championship franchise builds its rounds around spring itself: Easter, Mother's Day, garden parties, and enough floral cake toppers to stock a greenhouse. Ingredients

  • 180 g all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon fine salt
  • 2 large eggs, at room temperature
  • 170 g orange blossom honey, divided
  • 120 ml whole milk
  • 80 ml mild olive oil
  • Finely grated zest of 1 orange
  • 1 teaspoon vanilla extract
  • 35 g shelled pistachios, finely chopped

Method

  1. Heat the oven to 175 C, or 160 C fan. Grease a 12-hole muffin pan and line the bases with small rounds of baking paper.
  2. Whisk the flour, baking powder, and salt in a medium bowl.
  3. In a second bowl, whisk the eggs with 140 g honey until slightly thickened. Whisk in the milk, olive oil, orange zest, and vanilla.
  4. Fold the dry ingredients into the wet mixture just until smooth. Divide the batter evenly among the prepared holes.
  5. Bake for 16 to 19 minutes, until the cakes spring back and a tester comes out clean. Cool in the pan for five minutes, then turn onto a rack.
  6. Warm the remaining 30 g honey until fluid. Brush it over the warm cakes and scatter with chopped pistachios. Cool before serving.

  • 85 g cold unsalted butter, cubed
  • 160 ml cold heavy cream, plus extra for brushing
  • 3 ripe peaches, pitted and thinly sliced
  • 1 tablespoon lemon juice
  • 240 ml heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Method

  1. Heat the oven to 200 C, or 180 C fan. Line a baking sheet with baking paper.
  2. Whisk the flour, 35 g sugar, baking powder, salt, and ginger. Rub in the cold butter until the largest pieces are the size of peas.
  3. Stir in 160 ml cream just until a rough dough forms. Pat it 2 cm thick and cut six rounds, pressing scraps together once as needed.
  4. Place the rounds on the sheet, brush with cream, and sprinkle with the remaining sugar. Bake for 16 to 19 minutes until risen and golden, then cool for 15 minutes.
  5. Toss the peaches with lemon juice and let stand for ten minutes. Whip the remaining cream with powdered sugar and vanilla to soft peaks.
  6. Split each biscuit. Spoon peaches and their juice over the bases, add vanilla cream, and replace the tops.

Method

  1. Heat the oven to 175 C, or 160 C fan. Line a 20 cm square pan with baking paper, leaving an overhang.
  2. Beat the butter and powdered sugar until smooth. Mix in 180 g flour and the salt, then press the dough evenly into the pan.
  3. Bake the crust for 18 to 20 minutes, until lightly golden at the edges.
  4. Whisk the eggs with 225 g granulated sugar. Whisk in the remaining 40 g flour, lime juice, zest, and bourbon until smooth.

Method

  1. Heat the oven to 175 C, or 160 C fan. Line a 12-hole muffin pan with paper cases.
  2. Whisk the flour, baking powder, and salt in a medium bowl.
  3. In a second bowl, whisk the eggs, 160 g agave, oil, milk, lime zest, lime juice, and vanilla until smooth.
  4. Fold the dry ingredients into the wet mixture just until no flour streaks remain. Divide the batter evenly among the cases.
  5. Bake for 17 to 20 minutes, until the tops spring back. Cool in the pan for five minutes, then transfer to a rack to cool completely.
  6. Beat the cream cheese and butter until smooth. Beat in the remaining agave and lime zest, then chill for 20 minutes if the frosting is soft.
  7. Spread or pipe the frosting onto the cooled cupcakes and refrigerate until 20 minutes before serving.

Ingredients

  • 120 ml water
  • 120 ml whole milk
  • 100 g unsalted butter
  • 1/2 teaspoon fine salt
  • 1 teaspoon granulated sugar
  • 140 g all-purpose flour
  • 4 large eggs
  • 480 ml whole milk
  • 6 fresh mint leaves
  • Finely grated zest of 1 lemon
  • 100 g granulated sugar
  • 4 large egg yolks
  • 35 g cornstarch
  • 30 g unsalted butter
  • 150 g powdered sugar
  • 2 tablespoons lemon juice
  • One drop green food coloring, optional

Method

  1. Heat the oven to 200 C, or 180 C fan. Line two baking sheets.
  2. Bring the water, 120 ml milk, 100 g butter, salt, and teaspoon of sugar to a boil. Add the flour at once and stir over medium heat until a film forms on the pan.
  3. Cool for five minutes, then beat in the whole eggs one at a time until the choux is glossy. Pipe twelve 11 cm lines.
  4. Bake for 15 minutes, reduce the oven to 175 C, or 160 C fan, and bake 18 to 22 minutes more. Pierce each shell and cool.
  5. Heat the remaining milk with mint and lemon zest. Whisk 100 g sugar, yolks, and cornstarch, temper with the milk, then cook until thick. Remove the mint and whisk in 30 g butter. Chill covered.
  6. Fill the eclairs with pastry cream. Stir the powdered sugar, lemon juice, and optional coloring into a thick glaze and spread over the tops.

  • 250 g all-purpose flour
  • 1/2 teaspoon fine salt
  • 140 g cold unsalted butter, cubed
  • 3 to 4 tablespoons ice water
  • 4 large eggs
  • 120 g orange blossom honey, divided
  • 300 ml heavy cream
  • 120 ml whole milk
  • 1 teaspoon vanilla extract
  • Finely grated zest of 1 orange
  • 1/4 teaspoon orange blossom water
  • 40 g sesame seeds
  • 1/4 teaspoon baking soda

Method

  1. Mix the flour and salt, then rub in the butter until pea-size pieces remain. Add enough ice water to bring the dough together. Flatten, wrap, and chill for 30 minutes.
  2. Roll the dough and line a 23 cm pie pan. Chill for 20 minutes. Heat the oven to 190 C, or 170 C fan.
  3. Line the shell with baking paper and weights. Bake for 18 minutes, remove the weights, and bake for 8 minutes more. Lower the oven to 160 C, or 145 C fan.
  4. Whisk the eggs with 90 g honey. Whisk in the cream, milk, vanilla, orange zest, and orange blossom water. Pour into the shell.
  5. Bake for 27 to 32 minutes, until the edge is set and the center still trembles slightly. Cool completely.
  6. Heat the remaining honey in a small pan until bubbling and amber, stir in the sesame and baking soda, then spread thinly on baking paper. Cool, break into shards, and arrange on the pie just before serving.
