Ingredients
- 6 slices bacon
- 180 g all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon fine salt
- 115 g unsalted butter, softened
- 120 g light brown sugar
- 2 large eggs
- 80 ml pure maple syrup, divided
- 1 teaspoon vanilla extract
- 120 ml whole milk
- 225 g full-fat cream cheese, softened
- 60 g unsalted butter, softened
- 240 g powdered sugar
Method
Heat the oven to 180 C, or 160 C fan. Line a 12-cup muffin pan with paper cases.
Cook the bacon in a skillet until crisp. Drain it well, cool, and finely chop.
Whisk the flour, baking powder, and salt. In a separate bowl, beat 115 g butter with the brown sugar until light, then beat in the eggs one at a time.
Beat 60 ml maple syrup and the vanilla into the butter mixture. Fold in the dry ingredients in three additions, alternating with the milk.
Divide the batter among the cases and bake for 18 to 20 minutes, until a tester comes out clean. Cool completely.
Beat the cream cheese with the remaining 60 g butter until smooth. Add the powdered sugar and remaining 20 ml maple syrup and beat just until thick.
Pipe or spoon the frosting onto the cupcakes. Finish with the chopped bacon immediately before serving.
